How many selections are necessary to serve the audience?

In the digital land of infinite shelf space variety wins. It’s easy to serve almost everyone. But, when we’re confined by physical space, curation is really important. And, so is the space and experience of being in it. The wrapper matters quite a bit.

And then, every once in a while, we find a place which seems to have both. Of course, there’s usually a line…but, worth the wait. Make something worth waiting for…seems logical.
